Born in Bretagne, Patrick Raingeard works in Cap Estel from December 2011. Multi-awarded with one star in the “Guide Michelin”, 3 “toques and coup de coeur” from the Gault et Millau’s guide and the golden price “Gault et Millau PACA 2013”, throwback on the journey of this chef who proposes his cooking in the restaurant of the establishment : “La Table de Patrick Raingeard” (one star in “Le guide Michelin”)

Passionate of cooking since his earliest childhood when he was watching his grand-mother cooking, he started and trained beside the best French and international chefs. Alain Passard, 3 Michelin-star, Jacques Maximin at Le Doyen (2 stars), L’Elysée Lenôtre (2 stars), La Mère Poulard in Le Mont Saint-Michel, Ladurée Paris with Patrice Hardy and Pierre Hermé and in the Delphin in Nantes with Joseph Delphin (2 stars). Five years spent beside a Japanese chef also gave him the taste of new horizons’ flavors. Previously in the Zebra Square in Monaco, and then in Port Palace, he obtains in 2009 his rosette at the Guide Michelin.

Keen on products from de Méditerranée, his motto is the respect of these products. Concerned about the environment, he doesn’t propose for example the red tuna from Méditerranée on the menu because this specie is endangered. Guests could rather discover exalted local products, such as the lamb from Puget-Théniers, lemon from Menton, the Loup Sauvage (fish) of the shore or yet mandarins from La Turbie. The whole accompanied by vegetables coming from the vegetable garden, located in the heart of the garden of the domain: local artichoke, eggplant, tomato, courgette and other herbs…

Would it be daily with an evolving menu, of for special occasion and events, the chef, the catering director and their teams will surprise you at every new seasons, proposing a contemporary, generous and specialized menu, served with a flawless rigor of execution. Because, according to the chef: “Transcend simplicity is a form of elegance”
