They will meet “Tiuni” the little bear, the mascot present in the whole hotel with a variation in the children menu, but also in the activities such as ping-pong, tennis, boule games and during events such as Egg hunting for Easter and Christmas.

It is in these details that “Miss Rose by Perrine” works; a young company of floral design, well known on the Côte d’azur, and floral designer of the establishment.

Perrine Guyonnet found this company in Menton in spring 2010, dedicated to decorate with flowers Palaces of the French Riviera. She worked for example in the Hôtel Métropole MC, where she received in 2013 the price of the most beautiful floral decoration in the European hotel trade. She also had the honor to create the wedding bouquet of Princess Charlène, a moment that stays as one of its best memories.

Graduated in applied arts, the founder approach the flowers’ world with passion, a deep respect for nature, the love of its work and the desire to always do better. Surrounded by a team of 4 experienced florists, 2 handlers and numerous seasonal workers as backup, the firm proposes an elegant and innovating style with a unique sense of colors, movement and aestheticism.

In Le Cap Estel, each flower presented becomes actress of a staging that changes following seasons, events or moods… Perrine is well conscious to accompany the image of the Palace and mix with talent luxury and delight.

Table centerpieces, floating compositions on the pool or yet floral sculptures of initial letters for a wedding, the expertise of the young creator will impress the guests. Convinced that every details has its importance, she doesn’t hesitate to use excluded materials as little fruits, branch or even vegetables.

We met Mr. Emmanuel DA ROCHA, sommelier of the establishment, who has for main goal to please the customers of the hostel, by introducing them a unique and personalized selection of wines.

Part of the establishment since 2016, this passionate man started his career as assistant in England for the triple-starred Chef Mr. Marco Pierre White. He works then for 5 years in a hostel in Liverpool and came back in Paris region, where he’s from. On the French Riviera for 10 years, he was previously by the side of Yannick Franques, 2-starred Chef in Château Saint Martin and also in the Hôtel Saint Paul in Saint Paul de Vence.

Helping by his assistant and the catering director Mr. Pierre-Marie Ragon coming from the restaurant “La Palme d’or” (2 Michelin stars) of the hostel Martinez in Cannes, they selected 350 wines, mostly french. You could so enjoy a large selection of wines from Provence, as it is important for the team to highlight products of the region. Wines from Alsace and Anjou are also presented, as international ones from Italy, Spain, Australia, New-Zealand and South Africa, a nod to the nationality of the owners of the domain. The future project is to propose a wine list with 500 references.

The sommelier and its team also do a great work to propose dish-wine harmony, depending on the menu proposed by Mr. Raingeard. This menu changes daily, according to the market products and the cellar man has to stay inventive to highlight the gastronomic dishes concocted by the starred Chef.

So, you will discover a selection of wine for each of the two menus of the establishment. 4 glasses of wine for 60€ if you take the menu “Dégustation” and 6 glasses for 80€ accompany the menu “Découverte”. Some of the 350 wines of the selection don’t appear on the wine list to keep them especially for these dish-wine harmonies and introduce new flavors to the guests.

The establishment also takes part this year for the first time to the operation « Carte sur table ». Launched in Paris in 2011 by the DUCLOT VINICOLE house, this operation allow wine lovers to appreciate for a month a selection of 15 great wines of Bordeaux at wholesaler price. This operation takes place in 28 prestigious restaurants in Paris and provinces, which the Table of Patrick Raingeard in le Cap Estel is part and is the first restaurant participating on the Côte d’Azur. In this way, from 1st to 31st of March 2017, you will have the occasion to discover a majority of bottle around 100€ on table and a wine by the glass to savor wines from the best terroirs.

Multi-awarded with one star in the “Guide Michelin”, 3 “toques and coup de coeur” from the Gault et Millau’s guide and the golden price “Gault et Millau PACA 2013”, throwback on the journey of this chef who proposes his cooking in the restaurant of the establishment : “La Table de Patrick Raingeard” (one star in “Le guide Michelin”)

Passionate of cooking since his earliest childhood when he was watching his grand-mother cooking, he started and trained beside the best French and international chefs. Alain Passard, 3 Michelin-star, Jacques Maximin at Le Doyen (2 stars), L’Elysée Lenôtre (2 stars), La Mère Poulard in Le Mont Saint-Michel, Ladurée Paris with Patrice Hardy and Pierre Hermé and in the Delphin in Nantes with Joseph Delphin (2 stars). Five years spent beside a Japanese chef also gave him the taste of new horizons’ flavors. Previously in the Zebra Square in Monaco, and then in Port Palace, he obtains in 2009 his rosette at the Guide Michelin.

Keen on products from de Méditerranée, his motto is the respect of these products. Concerned about the environment, he doesn’t propose for example the red tuna from Méditerranée on the menu because this specie is endangered. Guests could rather discover exalted local products, such as the lamb from Puget-Théniers, lemon from Menton, the Loup Sauvage (fish) of the shore or yet mandarins from La Turbie. The whole accompanied by vegetables coming from the vegetable garden, located in the heart of the garden of the domain: local artichoke, eggplant, tomato, courgette and other herbs…

Would it be daily with an evolving menu, of for special occasion and events, the chef, the catering director and their teams will surprise you at every new seasons, proposing a contemporary, generous and specialized menu, served with a flawless rigor of execution. Because, according to the chef: “Transcend simplicity is a form of elegance”
